Torta italiana de batata e linguiça (Crostata)

Ingredientes

1 pacote de massa folhada (300 g) 
Recheio 
600 g de batata 
4 colheres (sopa) de óleo
1 cebola pequena cortada em cubos
½ pimentão vermelho cortado em cubos
200 g de linguiça calabresa fresca sem pele picada
Sal e pimenta calabresa a gosto
Salsa picada a gosto

Modo de preparo

Descongele a massa folhada, de acordo com as instruções da embalagem. Com a massa, forre o fundo e as laterais de uma fôrma de 22 cm de diâmetro, dobrando a borda da massa para fora da fôrma. Fure a massa com um garfo. Asse no forno preaquecido a 180°C até dourar, aproximadamente 50 minutos. Deixe esfriar.
Recheio 
Descasque e corte as batatas em cubos. Cozinhe-as na água com sal até ficarem "al dente". Em uma frigideira, aqueça o óleo, junte a batata e frite até dourar levemente.Sempre mexendo, junte a cebola, o pimentão, a linguiça e continue fritando até a linguiça ficar dourada. Tempere com mais sal, se necessário, a pimenta e a salsa. Desligue o fogo, distribua sobre a massa e sirva.

1 package phyllo dough (300 g)
Filling
600 g potato

Preparation
Thaw the puff pastry according to the package directions. With the dough, line the bottom and sides of a baking dish 22 cm in diameter, folding the edge of the dough out of the pan. Prick the dough with a fork. Bake in ovn preheated to 180 ° C until golden brown, about 50 minutes. Let cool.
Filling
Peel and cut the potatoes into cubes. Cook them in salted water until they are "al dente". In a skillet, heat oil, add the potatoes and fry until lightly browned.Always stirring, add the onion, bell pepper, sausage and continue frying until the sausage browned. Season with additional salt, if necessary, pepper and parsley. Turn off the heat, spread over the dough and serve.

Torta de Frango, Palmito e Catupiry

Pie Chicken, Palmito and Catupiry



Ingredientes 
400g de peito de frango cozido e desfiado
1 lata de tomates pelados (tomates e suco)
3 colheres (sopa) de azeite
1 cebola pequena cortada em cubinhos
2 dentes de alho picados finamente
Sal e pimenta do reino a gosto
Salsinha e cebolinha picada a gosto
1/2 xícara de palmito picado
10 azeitonas picadas
1/3 xícara de ervilha escorrida
250g de queijo tipo Catupiry


Ingredientes Massa

2 xícaras de farinha de trigo
2 colheres (sopa) de amido de milho
150g de manteiga gelada cortada em cubinhos
1 colher (chá) rasa de sal
2 colheres (chá) rasas de fermento em pó
1 ovo pequeno
4 colheres (sopa) de leite frio

Modo de preparo

Prepare a massa. Peneire os ingredientes secos e acresente a manteiga gelada. Misture com a ponta dos dedos até formar uma farofa. Acrescente o ovo inteiro e o leite até obter o ponto desejado (juntar todos os hngredientes bem). Não trabalhe muito a massa. Envolva a massa em um filme plástico e leve a geladeira por pelo menos 30 minutos. Reserve.
 Prepare o recheio. Leve ao fogo uma panela com o azeite e deixe esquentar. Refogue a cebola até ficar transparente, acrescente o alho e deixe refogar por mais alguns instantes (aproximadamente 1 minuto). Agregue o tomate picado e refogue mais um pouco. Acrescente o frango desfiado e o suco do tomate e tempere com sal e pimenta. Inclua o palmito, a ervilha, as azeitonas e a salsinha e a cebolinha. Deixe apurar por aproximadamente 5 minutos e desligue o fogo. Obs.: O recheio deve ficar molhadinho, com algum caldo (mas não muito), caso seja necessário acrescente um pouco mais do suco que restou na lata de tomates ou um pouco de água. Reserve.
 Montagem. Pré aqueça o forno a 180 graus. Retire a massa da geladeira e abra com um rolo. Cubra o fundo e as laterais de uma forma de aproximadamente 26cm (eu usei uma com fundo falso) fure o fundo com a ponta de um garfo. Leve ao forno por aproximadamente 10 minutos. Retire do forno e cubra com o recheio de frango e, por cima do recheio, o catupiry. Abra o restante da massa e cubra a torta ou faça tiras e corações como eu.   Sirva quente

2 cloves garlic, finely chopped

Parsley and chives to taste
1/2 cup chopped hearts of palm
10 chopped olives
1/3 cup of peas drained
250g of cheese type Catupiry

Ingredients Dough
2 cups all-purpose flour
2 tbsp (tablespoons) cornstarch
150g cold butter, diced
1 teaspoon (tsp) salt shallow
2 teaspoons (tsp) shallow baking powder
1 small egg
4 tablespoons (soup) of cold milk

Preparation
Prepare the dough. Sift the dry ingredients and acresente the cold butter. Mix with your fingertips until it forms a crumbly. Add the whole egg and milk until you get the desired point (join all hngredientes well). Do not work the dough too. Wrap the dough in a plastic wrap and refrigerate for at least 30 minutes. Reserve.
 Prepare the filling. Return to heat a pan with olive oil and let it heat up. Saute the onion until translucent, add the garlic and cook for another few minutes (about 1 minute). Subscribe to chopped tomatoes and saute a little longer. Add the shredded chicken and tomato juice and season with salt and pepper. Add the cabbage, peas, olives and parsley and chives. Let ascertain for about 5 minutes and remove from heat. Note: The stuffing should be moist, with some broth (not too much), if necessary add a little more juice left in the can of tomatoes or a little water. Reserve.
 Mount. Preheat the oven to 180 degrees. Remove the dough from the refrigerator and open it with a roller. Cover the bottom and sides of a form of approximately 26cm (I used one with a false bottom) pierce the bottom with the tip of a fork. Bake for about 10 minutes. Remove from oven and top with the chicken filling and over filling the catupiry. Open the remaining dough and cover the pie or make strips and hearts like me. Serve hot

Minitorta de Abóbora com Catupiry® e Camarão

Mini Pumpkin Pie with cream cheese and shrimp ®

Ingredientes

1 ovo
2 colheres (sopa) de óleo
1/4 de xícara (chá) de leite
600 g de abóbora sem casca cozida e amassada
3 xícaras (chá) e 1 colher (sopa) de farinha de trigo
Sal e pimenta a gosto
1 colher (sopa) de azeite
1 cebola pequena picada
1 dente de alho picado
300 g de camarão médio limpo
2 colheres (sopa) de queijo parmesão ralado
200 g de Catupiry®

Modo de preparo

Para a massa, misture numa tigela o ovo, o óleo, o leite, 100 g de abóbora, 3 xícaras (chá) de farinha de trigo e o sal. Trabalhe a massa em uma superfície enfarinhada até soltar das mãos. Com a massa, forre forminhas para minitortas de 7 cm de diâmetro e reserve. Para o recheio: aqueça, numa panela, o azeite e refogue a cebola, o alho e o camarão. Acrescente 500 g de abóbora, 1 colher (sopa) de farinha de trigo, o sal e a pimenta. Misture bem e cozinhe por mais 2 minutos. Desligue o fogo, junte o queijo parmesão e o Catupiry®. Deixe esfriar e recheie as tortinhas que estavam reservadas. Coloque as tortinhas numa assadeira e asse no forno preaquecido a 200 ºC por 30 minutos ou até dourar. 
Dica: substitua o camarão por peito de frango cozido cortado em pequenos cubos.

600 g pumpkin shelled boiled and mashed
3 cups (tea) and 1 tbsp (tablespoons) flour
Salt and pepper to taste
1 spoon (soup) of oil
1 small onion, chopped
1 clove garlic, minced
300 g cleaned medium shrimp
2 tbsp (tablespoons) grated Parmesan cheese
200 g of Catupiry ®
Preparation
For the dough, in a bowl mix the egg, oil, milk, 100 g pumpkin, 3 cups (tea) of wheat flour and salt. Work the dough on a floured surface until you release the hands. With the dough, line pans minitortas to 7 cm in diameter and set aside. For the filling: heat, a pan, olive oil and saute the onion, garlic and shrimp. Add 500 g pumpkin, 1 tbsp (tablespoons) flour, salt and pepper. Mix well and cook for another 2 minutes. Turn off the heat, add the Parmesan cheese and Catupiry ®. Let cool and fill the pies that were reserved. Place the tarts on a baking sheet and bake in preheated oven at 200 º C for 30 minutes or until golden.
Tip: Substitute shrimp for cooked chicken breast cut into small cubes.
